Xương heo rửa sạch, để ráo. Cà rốt nạo vỏ, để nguyên củ. Cần tây bỏ rễ, nhặt lá úa, rửa sạch. Hành tây bỏ vỏ, rửa sạch, cắt đôi. Hành tím rửa sạch, nướng trên bếp khoảng 2 – 3 phút, hành tỏa mùi thơm là được.
Cho xương heo, cà rốt, hành tây, rau cần tây vào nồi. Đổ nước lạnh vào, cao hơn xương khoảng 2cm. Thêm giấm vào nồi và ninh xương từ từ với lửa nhỏ trong khoảng 1 giờ, nếu có váng mỡ thì bạn vớt sạch đi.
Sau 1 giờ, bạn nhẹ nhàng vớt rau củ ra để tránh chúng bị nát, làm nồi nước dùng vẩn đục. Thêm 2 thìa cà phê muối, đun thêm khoảng 2 – 3 giờ nữa rồi tắt bếp.
Đợi nước dùng nguội, bạn đổ vào bình thủy tinh, hộp nhựa rồi để vào ngăn mát tủ lạnh để nước dùng đông lại. Sau khoảng 1 tiếng, bạn lấy nước dùng ra, vớt bỏ phần mỡ đông ở phía trên đi rồi đậy nắp, cho vào ngăn mát tủ lạnh để bảo quản.
