Khoai tây gọt vỏ, cắt đôi, rửa sạch rồi cho vào nồi luộc chín. Hành tây bóc vỏ, cắt nhỏ.
Vớt khoai tây ra, để nguội và thật ráo nước. Tốt nhất nên để nguyên khoai tây trong nồi, chắt sạch nước rồi đun nhẹ giúp hơi nước ở khoai tây bốc hơi hoàn toàn.
Bỏ khoai tây vào tô, nghiền nhuyễn. Thêm 1/4 muỗng cà phê tiêu và 1 muỗng canh bơ vào.
Cho 2 muỗng canh dầu ăn vào chảo, cho hành tây cắt nhỏ vào. Xào cho đến khi hành tây mềm và thơm.
Đổ thịt bò xay vào xào cùng, dùng muỗng gỗ đảo đều. Khi thịt chín tới, bỏ thêm 1 muỗng cà phê muối và 1/4 muỗng cà phê tiêu. Tắt bếp, để nguội thịt bò hành tây.
Cho thịt bò hành tây vào tô khoai tây nghiền. Dùng muôi gỗ trộn đều.
Khi hỗn hợp này chỉ còn âm ấm thì nặn chúng thành từng viên tròn kích thước tùy thích. Sau đó, để chúng vào trong tủ lạnh chừng 15-30 phút.
Lấy 3 lòng đỏ trứng gà đánh tan với 1/2 chén bột mì và 2 gói bột chiên xù. Sau đó, nhúng những viên khoai tây vừa lấy trong tủ lạnh vào.
Bỏ khoai tây thịt bò viên vào chiên ngập trong dầu đang sôi. Chiên vàng đều, vớt ra để giấy thấm dầu bớt.
Món này chấm cùng tương ớt, tương cà hay sốt mayonnaise đều ngon tùy khẩu vị của mỗi người.
